I Think that I'm addicted

This is the third Sunday within the last month and a half that we have had enchiladas.  This time I made them with chicken.   They were much better this time then any other time.




Five chicken breast
1 package of taco seasoning
jar of salsa
1 can of enchilada sauce
cheese
taco shells

Around noon, I placed 5 frozen chicken breast into my crock pot with a package of taco seasoning and I filled the package with water and put that in the crock pot, plus half a jar of chunky salsa.  I turned the crock pot on to low and let it cook for about 4 hours. 


I took out the chicken and cut it up into little chunks and put it in the taco shells, placed the seam side down in the pan.  Then put enchilada sauce over all of the enchiladas, then shredded cheese and cooked them for about 15 minutes in a preheated oven at 350. 


I made about 20 enchiladas.  Maybe next Sunday... I will have something different.

Summer Dessert

So G. and I went shopping and I found some white peaches super reduced.   I got 10 peaches for $1.30.  Last night we had company over and I wanted to make a healthy dessert. After looking online for thirty minutes, I decided to wing it.


Peaches
3 tablespoons of butter(sliced)
3 tablespoons of brown sugar
3 tablespoons of white sugar
1/4 cup of lemon juice(from fresh lemon)


Cut the peaches in half and remove the pit.  Place the peaches skin down in a casserole pan.  I lined the pan with tinfoil.  Cut the butter into little cubes and placed one cube in the center of each peach.  Then I sprinkled the peaches with the white and brown sugar.  Then I squeezed the lemon over the peaches and placed them in the oven for 25 minutes. 

I served them warm and by themselves, but you could serve them with Vanilla ice cream.

So overall it was a great adventure! 

Tonight I am trying homemade chicken enchiladas.  I have already but the chicken breast in the crock pot with taco seasoning, a little bit of water, and salsa.

Meat Tenderizer.. why do you taunt me?

So when G. and I were moving into our apartment, I was given many misc. kitchen utensils, by my beloved nana.  In this multitude of utensils there was a meat tenderizer.  Yesterday I decided to make pork chops and thought if maybe I used the tenderizer that the pork chops would be AMAZING.  So I used the tenderizer for a total of four whacks and then rubbed the mixture of spices that I concocted.  After letting that set, I put them in a frying pan on a medium heat and let them cook thoroughly so the were at the right internal temperature.  While the taste was good, the texture that they had was not appetizing.

So the first attempt at the meat tenderizer was not successful...so to searching I go.

Fireman's Festival... no cooking today!!!

So that last Saturday in July is Fireman's Festival.  I have been going for six years and this year was extra special. I got to spend the entire day with some of my family and friends.  I finally found a coffee table, which while my apartment is kind of small, I love it!  I love the sense of community in this town.  I feel like I am apart of the town. People know me and I know people.  I am in love with this weekend. 

I am also in love with this time that I get to share with my boyfriend. He is amazing and just by sitting back and watching him interact with people makes me realize how great of a person he is.  He stood in line for about 30 minutes to get us the chicken dinners that the firemen provide for this festival. 

I am in love with love.  I know that it sounds corny, but I want everyone to be happy.  I know that sometimes this is something that I need to work on myself and I am trying.  Each day I realize how blessed I am and I smile and little more, put a little more pep in my step and try and make someone else have a magical day.

Spice up your life

When two household collaborate for dinner there are endless possibilities.  Kellie and I were sitting in my living room trying to figure out what to have for dinner.  So we decided Enchiladas!

So here it goes:

1 lb of ground hamburger
1 medium onion - diced
1 can of red kidney beans
1 can of diced tomatoes with chili peppers
1 can of enchilada sauce
1 package of taco seasoning
1 bag / block of shredded cheese
flour taco shells

Brown you hamburger over medium heat.  Add  taco seasoning, onion, kidney beans, and tomatoes.  Let cook- stirring occasionally for 10 minutes.  Spray non-stick spray in a 13X9 pan.  Use a 1/4 or 1/3 measuring cup to put the meat in the taco shell.  Roll the shells and put the sealed end facing the bottom of the pan.  Top with the enchilada sauce and add shredded cheese.  Cook at 375 degrees for 15 to 20 minutes.

Two sides to every cutting board... well most of the time!

I haven't been cooking and/or posting as much as I would like to.  Life has finally settled down, but the HEAT WAVE that we are having had not made cooking fun. I do not have central air and our apartment heats up very fast with the oven on.


So, I am not a big leftover person, but my boyfriend will eat anything !   So here is the recipe for the leftover scramble that I made him this morning!!


Sausage links/patties( left over part)
3 eggs( can be as many as you like)
shredded cheddar
1/4 cup of diced onion
some fresh chives
1 clove of chopped garlic
salt and pepper to taste
A couple tablespoons of butter or oil to cook the egg

Melt butter or warm oil in pan over medium heat.  Add the onion and left cook so they become translucent. Then add chives, salt, pepper to the pan.  Only cook for a few minutes because burnt garlic... not so great !!

  Crack your eggs into a small bowl and lightly beat them with a fork.  Pour them into the pan and stir.  While that starts to cook cut up your sausage into little pieces. Add that to the pan.  Then add some shredded cheese.  This can be as much or as little as your cooking heart desires!  Stir and let the mixture finish cooking.  I like my eggs a little running, but still cooked enough to be considered done. 

Serve with toast and enjoy!

Corn Bread Cravings

First and foremost I would like to say that my title has no indication of anything.  I just really like cornbread.

I was having a few people over last night and I had  3 large chicken breast out.  I found a recipe for Crispy Ranch chicken tenders.  I modified the recipe because one of my guest does not like Ranch.

1 - 8.5 ounce box of Corn muffin mix
1 or 2 tablespoons of garlic powder
1/4 cup of grated Parmesan cheese
1 tablespoon of dried onion
salt and pepper to taste

Cut the chicken in small strips.   In a medium bowl mix together the ingredients listed above.  In another small bowl crack 2 eggs.  Lightly stir the eggs.  Dip  the chicken strips in the egg mixture, then coat them in the dry mix.  In a large frying pan on medium heat, add about 2 tablespoons of oil, once this is hot, place your chicken strips in the pan.  Flip the chicken strips after a few minutes.


I modified the recipe that I found...so please feel free to modify mine.   

I love trying new things!  My grandpa taught me to not be scared of trying new things and he is my inspiration for this blog.  He is no longer with here, but will never be forgotten! <3
