Two sides to every cutting board... well most of the time!

I haven't been cooking and/or posting as much as I would like to.  Life has finally settled down, but the HEAT WAVE that we are having had not made cooking fun. I do not have central air and our apartment heats up very fast with the oven on.


So, I am not a big leftover person, but my boyfriend will eat anything !   So here is the recipe for the leftover scramble that I made him this morning!!


Sausage links/patties( left over part)
3 eggs( can be as many as you like)
shredded cheddar
1/4 cup of diced onion
some fresh chives
1 clove of chopped garlic
salt and pepper to taste
A couple tablespoons of butter or oil to cook the egg

Melt butter or warm oil in pan over medium heat.  Add the onion and left cook so they become translucent. Then add chives, salt, pepper to the pan.  Only cook for a few minutes because burnt garlic... not so great !!

  Crack your eggs into a small bowl and lightly beat them with a fork.  Pour them into the pan and stir.  While that starts to cook cut up your sausage into little pieces. Add that to the pan.  Then add some shredded cheese.  This can be as much or as little as your cooking heart desires!  Stir and let the mixture finish cooking.  I like my eggs a little running, but still cooked enough to be considered done. 

Serve with toast and enjoy!
