Spice up your life

When two household collaborate for dinner there are endless possibilities.  Kellie and I were sitting in my living room trying to figure out what to have for dinner.  So we decided Enchiladas!

So here it goes:

1 lb of ground hamburger
1 medium onion - diced
1 can of red kidney beans
1 can of diced tomatoes with chili peppers
1 can of enchilada sauce
1 package of taco seasoning
1 bag / block of shredded cheese
flour taco shells

Brown you hamburger over medium heat.  Add  taco seasoning, onion, kidney beans, and tomatoes.  Let cook- stirring occasionally for 10 minutes.  Spray non-stick spray in a 13X9 pan.  Use a 1/4 or 1/3 measuring cup to put the meat in the taco shell.  Roll the shells and put the sealed end facing the bottom of the pan.  Top with the enchilada sauce and add shredded cheese.  Cook at 375 degrees for 15 to 20 minutes.
